Basic Sweet Dough
In a large
bowl, place the milk, sugar, and salt. Stir until dissolved. In a small
bowl or measuring cup, add the yeast to the lukewarm water and proof by
adding a pinch of sugar. Let stand for a few minutes. If the yeast
rises, it is working and ready for baking. Stir and add to the milk
mixture. Add the eggs and the butter and margarine.
Gradually add the flour, using only enough to make it easy to
handle. Your may need more or less flour, depending on the brand of
flour you're using and the amount of humidity in the air. If using an
electric mixer with kneading hook, knead for approx. 4 minutes or until
smooth and elastic. If dough sticks to the board or surface, lightly
flour and place in greased or oiled bowl. Turn the dough until all sides
are lightly covered with oil--this prevents dough from drying out. Cover
with a clean damp cloth. Let rise in a draft-free area until double in
size, approx. 1 hour. knead for a minute to work out all the air
bubbles. Cover again for approx. 30 minutes until almost double. Shape
as desired and bake in 375° F oven for 30 minutes, or until well-baked.
