Cashew Brittle
Combine
the sugar, syrup, and water together in a deep, heavy saucepan and bring
to a boil. Insert candy thermometer and cook on medium heat to hard ball
stage (250° F.), stirring frequently.
Add the nuts and continue to boil to 300° F, stirring constantly. Keep a
close eye on the syrup temperature as it takes quite a while to reach the
290° F mark, then all of a sudden it spurts to 300° F and it is finished.
Stir in the soda and pour onto a buttered cookie sheet. Break when cool.
Variation: Peanuts may be substituted.
