ingredients except vanilla and cook to 238° F on candy thermometer or
until small amount dripped into cold water forms a soft ball that flattens
when removed from water. Cool without stirring to 120° or until bottom of
pan is lukewarm. Add vanilla. Beat continuously with wooden spoon until
candy is thick and no longer glossy, probably 5-10 minutes. Pour into
buttered loaf pan, 9x5x3" and cool until firm. Cut into 1 inch squares.
