Angel Food Cake

  Preheat oven to 375° F. Sift together 3/4 c. of sugar and the 1 c. of flour three times. Set aside. Beat egg whites until frothy, then add salt and cream of tartar. Beat until it stands in peaks. Add rest of sugar about 3 Tbsp. at a time, beating well with a beater after each addition. Lightly fold in sugar and flour mixture, adding about 1/2 c. at a time. Add almond flavoring. Bake about 35-40 minutes in a tube pan. 1½ c. egg whites (11-12)
1½ c. white sugar
1½ tsp. cream of tartar
 c. cake flour
1/2 tsp. salt
1 tsp. almond flavor
