Angel Food Chocolate Cake
Put egg
whites, cream of tartar and salt in large mixing bowl and beat at medium
speed until foamy. Add 1 cup sugar, 2 tablespoons at a time into the
foamy egg whites while beating at medium speed. After last sugar is
added, beat on high until stiff. Fold in vanilla. Sift together
remaining sugar, flour and cocoa. Add to egg whites in 3 parts. After
each addition fold in gently with wire whip, 25 whips for each addition.
Bake at 375° F for 40-45 minutes in angel food cake pan. for white cake
use 1½ cups cake flour and omit cocoa.
