Apple Walnut Cake

  In a large mixing bowl, beat together eggs, sugar, oil, and vanilla. Combine flour, baking soda, cinnamon, nutmeg, and salt; ix into batter. Fold in apples and nuts. Spread into 13x9x2" baking pan. Bake at 325° F. for 50-60 minutes, or until cake tests done; cool. Frost. Yield: 12-15 servings. 3 eggs, beaten
2 cups sugar
1/2 cup vegetable oil
2 tsp. vanilla
2 cups all-purpose flour
2 tsp. baking soda
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. salt
4 cups diced, unpeeled apples
1 cup coarsely chopped walnuts
