Beet Cake
Cream
together egg yolks, oil, and sugar. Mix together flour, baking powder,
salt, and cinnamon. Combine vanilla, beets, carrots, and nuts; add to
creamed mixture. Add dry ingredients; mix. Fold in egg whites. Bake in a
tube pan or 9x13 pan at 350° F. for 1 hour. For topping, cook cream and
brown sugar to caramel stage. Remove from heat and add coconut and nuts.
Spread over hot cake and return to the oven for about 5-10 minutes.

2 c. flour
2 t. baking powder
1/4 t. salt
1 t. cinnamon
1 t. vanilla
1 c. shredded beets
1 c. shredded carrots
1 c. nuts
3 egg whites, beaten
Topping:
1 c. cream
1 c. brown sugar
3/4 c. fine coconut
nuts, optional
