Big Walnut Cake

  Preheat oven to 350° F. Sift together cake flour, baking powder and salt. Set aside. Cream shortening, almond extract, vanilla, 1½ c. sugar and egg yolks Add dry ingredients alternately to creamed mixture with milk. Beat until smooth, after each addition, ending with flour. Beat egg whites until fluffy and add 1/4 c. sugar. Fold the egg whites slowly into the cake batter. Add nuts and pour into greased, floured pans. Make 3 layers. Bake for 30-35 minutes. 1¼ c. walnuts, chopped
3½ c. cake flour
5 tsp. baking powder
1 tsp. salt
1½ c. milk
4 egg whites
1 c. shortening
1 tsp. almond extract
1 tsp. vanilla
1½ c. sugar
4 egg yolks, beaten
1/4 c. sugar
