Blue Ribbon Banana Cake
In a large mixing
bowl, cream butter and sugar until fluffy. Add eggs; beat 2 minutes. Add
bananas: beat 2 additional minutes. Set aside. Sift together flour, soda,
and salt; add to creamed mixture alternately with buttermilk and vanilla.
Beat well; stir in nuts. Turn into 2 lightly greased 9" round cake pans.
Sprinkle half of the coconut on batter. Bake at 350° F. for 25-30 minutes.
Remove cake from pan and cool. Spread creamy nut filling on one layer.
Place remaining cake layer, with coconut side, on top of filling. Frost
with creamy white frosting. |
