Blend dry ingredients; mix rest of ingredients and combine both. Bake at 350° for 35 minutes.
You can also bake this on a cookie sheet, and then thicken and sweeten (if you want) a quart of cherries. Spread cherries over cake instead of icing and sprinkle with unsweetened shredded coconut.
