Dottie Kreider's Date and Nut Cake
Mix dates,
boiling water, and baking soda in a medium bowl and set aside.
Cream the eggs, shortening, and sugar in a large mixing bowl
until fluffy. Gradually add the flour, salt, and vanilla. Fold in the
chopped nuts. Mix in the dates until well blended. Pour into a greased
9" x 13" pan. Bake in a preheated 350° F. oven for 45
minutes.
Butter Frosting:
Cream the butter in a small bowl until soft. Add the cream,
sugar, and vanilla. Beat until smooth and creamy. Spread on the cake.
Makes 1 cake, 9" x 13"

2 c. pitted and chopped dates
2 c. boiling water
2 t. baking soda
2 eggs
4 T. vegetable shortening
2 c. sugar
3 c. flour
1/2 t. salt
1 t. vanilla extract
1½ c. chopped nuts

3 T. Butter
1 T. cream
1½ c. confectioners' sugar
1/2 t. vanilla extract
