Amish Recipes Fluffy Marshmallow Cake Icing

Combine sugar, water, cream of tartar and salt in saucepan. boil rapidly until syrup spins 6" - 8" thread. Stir in marshmallows until dissolved. Beat egg whites to stiff point. Pour hot syrup into egg whites, beating constantly. Add vanilla. Beat until icing is stiff. Optional: Add 1/3 cup jello.

1 cup sugar
1/3 cup water
1/4 teaspoon cream of tartar
pinch of salt
2 egg whites
8 large marshmallows
1 teaspoon vanilla
