Marble Cake

Sift together flour, sugar, baking powder, and salt. Add shortening, milk, and vanilla; beat for e minutes. Add egg whites; beat 2 minutes more. Pour 2/3 of batter into cake pan. Mix chocolate with soda and warm water. Add food coloring. Pour over white batter; cut with knife to marbelize. Bake at 350° F. for 25-30 minutes. Note: 3 T. cocoa plus 1/2 T. shortening may be substituted for 1 square of baking chocolate.

2-1/8 c. all-purpose flour
1½ c. sugar
3½ t. baking powder
1 t. salt
1/2 c. shortening
1 c. milk
1 t. vanilla
4 lg. egg whites
1 square baking chocolate, melted
1/4 t. soda
2 T. warm water
1/4 t. red food coloring
