Nutritious and Delicious Carrot Cake
Beat first five ingredients vigorously for 3 to 5 minutes in a large
mixing bowl. In another bowl combine flour, baking soda, baking powder and
cinnamon. Mix into liquid ingredients. Add carrots, apple, raisins,
coconut, and nuts, and stir into batter. Bake in greased 9x13" cake pan at
325° for 35 to 40 minutes. Cool, then frost with cream cheese icing. Whip
cream cheese till smooth. Add enough maple syrup till it's of spreading
consistency. |
1 cup vegetable oil
3/4 cup honey
3 eggs
1 tsp. vanilla
1/2 tsp. salt
2 cups whole wheat flour
2 tsp. baking soda
2 tsp. baking powder
2 tsp. cinnamon
2 cups shredded carrots
1 medium apple, finely diced
1/2 cup raisins
1/2 cup unsweetened coconut
1/2 cup pecans or walnuts, chopped
Maple Cream Cheese Icing:
2 - 8 oz. pkg. cream cheese
