Rhubarb Cake 2

  Preheat oven to 350° F. Mix 1/2 c. sugar with rhubarb. Set aside. Blend butter, 1½ c. sugar, egg and vanilla together. Mix together flour, cinnamon, soda and salt. Add alternately to butter mixture with buttermilk. Add rhubarb mixture, nuts, coconut and raisins and blend together. Pour into a greased 7 x 12 " pan. Bake for 45 minutes. 1/2 c. sugar
2 c. finely cut rhubarb
1/2 c. butter
1½ c. sugar
1 egg
2 c. plus 2 Tbsp. flour
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1 c. buttermilk
1/2 c each coconut, nuts and raisins.
