Tofu Maple Cheesecake
Dissolve
gelatin in 1/4 cup cold water. Heat orange juice concentrate over low heat
and add gelatin. Cool. Blend rest of ingredients (except oats) in blender,
then add orange juice concentrate and blend well. (A Salsa Master could
also be used.) For crust, use rolled oats and add enough of the filling to
make it stick together. Press into pie pan and pour in filling. You can
chop a little flaxseed and sprinkle on top if you wish. Refrigerate
several hours or overnight. A graham cracker or butter crunch crust can
also be used. Serves 4-6. |
1/3 cup orange juice concentrate
1 Tbsp. unflavored gelatin
2 - 12oz. bars or 2 - 10.5 oz. tofu
1 large ripe banana
2/3 cup maple syrup
1/2 tsp. vanilla
2 Tbsp. lemon juice
1½ cups rolled oats |
