Cocoa Cheese Sandwich Cookies
In a large bowl,
combine all ingredients except pecans and filling. Blend well at low
speed. Divide dough in half; shape into two 2" rolls. Wrap in wax paper;
chill at least 2 hours. Cut into slices about 1/8" thick; place on
ungreased cookie sheets. Garnish half the slices (for cookie tops) with a
pecan half. Bake at 350° F. for 8-10
minutes. Place 2 cookies together with the Cheese filling in
the middle, sandwich style, using a plain slice for the bottom half.
Cheese Filling:
Blend all ingredients together until creamy and smooth |
2 c. all purpose flour
1/2 tsp. salt
3/4 c. sugar
1/3 c. cocoa
3/4 c. butter
1 egg
1 tsp. vanilla
pecan halvesCheese Filling:
3 Tbsp. butter
1 Tbsp. cream
3 oz. pkg. cream cheese, softened
2 c. confectioners sugar
1/4 tsp. salt |
