Little Girl Pie
Cream sugar and
shortening. Add egg, milk, and vanilla; mix well. Combine dry ingredients;
add to creamed mixture and beat well. Chill. Meanwhile, for filling
combine sugar and cornstarch in a saucepan. Add water and stir to
dissolve. Add raisins and cook until mixture is thick, stirring
constantly. Set aside to cool. Roll chilled dough on floured board to 1/8
inch thickness. Cut into 3 inch circles. Using a thimble, cut small holes
i the center of 1/2 of the circles. Place 1 tsp. filling on solid circles;
top with a circle that has a hole. Press edges together firmly. Bake at
375° for 15-17 minutes on greased sheets. Yields 2 dozen. |
