Fluffy Tapioca Pudding

Mix tapioca, salt, 3 tablespoons sugar, milk and egg yolk in pan. Let stand 5 minutes. Beat egg white until foamy, gradually beat in 2 tablespoons sugar, beating to soft peaks. Set aside. Cook tapioca mixture over medium heat to a full boil, stirring constantly. Gradually add to beaten egg white, stirring quickly. Stir in vanilla. Cool. I like t add crushed pineapple after it is cold.

3 tablespoon tapioca (minute)
3 tablespoon sugar
1 egg yolk
2 tablespoons sugar
1/8 teaspoon salt
2 cups milk
1 egg white
3/4 teaspoon vanilla
