Sugar-free Date Pudding
Put soda over dates. Pour
boiling water over. Let set till cooled, then add remaining 5 ingredients.
Pour into greased 8x12" pan. Bake at 375° for 25
minutes. Cool.
To make pudding and cream: Whip cream; add vanilla, salt and apple
juice concentrate. Mix instant butterscotch pudding mix in blender
according to directions on package. At lowest speed on mixer, mix pudding
into the cream.
Place in layers in serving dish: date cake cut up in small squares,
2-3 bananas, pudding and cream mixture, ending with pudding and cream on
top. Sprinkle chopped nuts over top. |
1 cup chopped dates
1 tsp. soda
1 cup boiling water

1 pinch salt
1/2 cup chopped walnuts

1 small box sugar-free instant butterscotch pudding
