Vanilla Pudding

Scald the milk in the top of a double boiler. In a bowl, combine the sugar, cornstarch, salt, and beaten eggs. Add to the hot milk. Cook over boiling water for approx. 5 minutes, stirring constantly, until thickened. Remove from heat. Add the butter and vanilla. Serve war, or cold with fruit.

serves 6

1 quart milk
1 c. granulated sugar
3 T. cornstarch
1/2 t. salt
4 eggs lightly beaten
1 T. butter
1 t. vanilla extract
