Beef Tips with Noodles
Melt the
butter in a skillet and sauté the beef cubes until lightly browned.
Season with salt and pepper. Remove the meat and add the onions, chives
and mushrooms and cook for 5 minutes. Add 1/2 cup wine or water to
deglaze the pan. When heated, stir in the sour cream and add the beef
cubes, stirring until smooth and heated thoroughly. Serve over noodles

1/4 c. onion, chopped
1/4 c. fresh chives, chopped
1/2 c. red wine
1˝ c. sour cream
