 | Taco Filled Peppers 
  
  
    
      | In skillet
        brown beef; drain. Stir in taco seasoning, beans and salsa. Bring to
        boil, reduce heat, simmer for 5 minutes. Cut peppers in half lengthwise,
        remove seeds and stems. Immerse peppers in boiling water for 3 minutes.
        Drain. Spoon approximately 1/2 cup meat mixture into each pepper half.
        Place in ungreased 13" x 9" baking dish. Cover and bake at
        350° F for 15 to 20 minutes or until peppers are crisp tender. Top each
        with tomato, cheese and a dollop of sour cream. Yield: 4 servings. | 1

 1 can refried beans
 1 cup salsa
 4 medium green peppers
 1 medium tomato, chopped
 1/2 cup shredded Colby cheese
 1/2 cup sour cream
