Western Roast Beef
Slice raw beef
roast about 1/2" thick and layer with onion slices in pan that has a
tightly fitting cover. Splash a little sauce on each layer and be sure the
sauce reaches to cover the top layer. Bake at 350° for 3 hours or more
until beef starts to fall apart. For a large crowd prepare a 6-quart
cooker full, baking all day at 225°. Take the cover off for the last 1/2
hour to reduce moisture. |
1 large beef roast
1 large onion
Sauce:
1 cup water
1½ tsp. salt
1/4 tsp. chili powder
1 Tbsp. brown sugar
1 cup catsup
1/4 tsp. Tabasco sauce
1/2 tsp. mustard
