| In a bowl,
add salt to cooked rice. In a saucepan, melt butter and sauté chives,
herbs, onions, and peppers for 5 minutes. Add mushrooms and simmer 3
minutes longer. Add rice and stir until well blended.
2 c. cooked rice
2 T. butter
1 T chopped fresh chives
1 t. chopped fresh lemon-scented thyme, or 1 t. fresh regular thyme and
1/2 t. grated lemon rind
1/2 c. chopped onion
1/2 c. chopped green peppers (about 1/2 of a medium pepper)
1/2 c. sliced mushrooms
