Milk-Baked Fish
Arrange
fish in greased baking dish. Add butter to milk. Add salt (celery salt,
onion or garlic salt could be substituted), pepper and parsley. Pour
carefully around the fish. Top with crumbs and dot with butter. Bake in
preheated 350° F oven for approx. 30 minutes or until milk is nearly
absorbed. Serve without additional sauce.
Serves 4-6

pounds fish, strong flavored such as shad or cod (steaks or fillets)
1 c. milk, heated
2 t. butter or margarine
1/4 t. each of salt, pepper and parsley flakes
1 c. crumbled corn flakes, chips or cracker crumbs
3 T. butter or margarine (optional) |
