Fried Rabbit
Wash
the rabbit. If it was shot, remove all pellets. Marinate in wine for 6-8
hours, refrigerated and covered. Pat dry with paper towels. Combine the
flour, salt, pepper, and ginger in a paper or plastic bag. Shake the
pieces of rabbit in this until well covered. Heat shortening in heavy
skillet. Fry rabbit over medium heat about 15 minutes on each side until
golden brown., Cover for the last 10 minutes. For crisper coating, fry a
little longer, uncovered. Serves 4

1 rabbit, cleaned and cut into serving pieces
2 cups dry wine
1/2 c. flour
1½ t. salt
1/4 t. pepper
1/4 t. ground ginger
shortening for frying
