Fran Sauder's Ham Loaf
In a large
mixing bowl, combine the ham and beef, mixing well with a wooden spoon.
Add the remaining ingredients and form into 2 loaves. Place in 2 greased
loaf pans or one large baking dish. (Bake one, freeze one). Bake in a
350° F. preheated oven for 1 hour or until golden brown and bubbling on
top.
Baking the ham in water keeps it
moist and tender. Changing the water is necessary only if the ham is
very salty. it will still retain the smoky flavor.
Serves 8-10

pounds ground cured ham
2 lbs. ground beef
1 small onion, diced fine
2 eggs, lightly beaten
1/2 cup tapioca
1/2 cup dry bread crumbs
1 c. milk
1/2 c. water
1/2 c. white vinegar
3/4 c. light brown sugar
1 T. prepared mustard
1 t. salt
1/2 t. pepper |
