Apple Stuffing
Fry bacon
and drain on paper towels. Break into bits. Sauté the celery, onion and
parsley in the bacon fat for 10 minutes on low heat. Remove and place in
a large mixing bowl. Add the sugar to the remaining fat in the pan. Add
the apples and sauté, shaking the pan, until the apples are golden and
almost soft. Put apples, bacon bits and cracker crumbs in the mixing
bowl with the vegetables and toss together until well blended.

1/4 c. parsley, chopped
freshly ground pepper
1/2 c. sugar
4 c. apples, peeled, cored and diced
1 c. cracker crumbs |
