Broil-Fried Chicken with Chives and
Lemon
Melt the
butter in a broiler pan after removing the rack. Be sure butter covers
every area of the pan. Lay the chicken pieces in the butter with the
bone side up. Sprinkle with half the salt and pepper. Broil until golden
brown, then turn and sprinkle with the remaining salt and pepper. Then
add the chives and lemon rind evenly over each piece. Add the lemon
juice last. Broil until golden brown. Reduce oven heat to 350° F. and
bake chicken for 15 minutes. Do not baste.

c. butter
3 frying chickens, cut into serving pieces
2 t. salt
1/2 t. freshly ground pepper
2 T. finely chopped fresh or 1 T. dried chives
2 T. freshly grated lemon rind
juice of 1 lemon |
