Easy Broil Fried Chicken
| Melt the
butter in a broiler pan (remove the rack), so that you have a layer of
butter about 1/4" deep. Lay the chicken pieces in the butter,
lightly salt and pepper them, with the bone side up. Broil until golden
brown, turn, season the skin side, and broil until golden brown. Reduce
oven heat to 350° F. and bake chicken for 15 minutes.
3 frying chickens, cut in serving pieces
2 t. salt
1/2 t. freshly ground pepper
