Marinated Tomatoes and Onions
the tomatoes in a large bowl. Place the onions on top. Sprinkle the
herbs on top. In a small bowl, blend the oil, vinegar, wine, sugar,
salt, and pepper with a wire whisk until all the sugar is dissolved.
Pour over the tomatoes and onions. Cover with plastic wrap and
refrigerate for several hours. Serve chilled, garnished with fresh
pounds firm tomatoes, cored and sliced
2 med. onions, sliced
2 T chopped herbs (dill, chives, oregano, parsley, thyme, etc.)
1/2 c. salad oil
1/2 c. cider vinegar
1/4 c. white whine
1/4 c. granulated sugar
1/2 t. salt
several dashes freshly ground pepper
fresh parsley for garnish
