Roasted Potato Salad
| Quarter potatoes,
lay skin side down onto a well-greased cookie sheet. Roast in oven at 350°
until tender and golden. While potatoes are cooking gather rest of
ingredients, cutting up boiled eggs and onion. Crumble fried bacon into
pieces. When potatoes are finished, immediately fold in Miracle Whip, then
rest of ingredients. This dish is best served when hot.

1 cup Miracle Whip
4 boiled eggs
1 pkg. fried bacon
1/2 cup finely chopped onion (optional)
salt and pepper to taste
