Black Walnut Sweet Potatoes
| Cover the
sweet potatoes with hot salted water. Boil approx. 15 minutes until
tender. Peel and quarter potatoes. Place in a 1-quart buttered baking
dish and baste with melted butter. Sprinkle with brown sugar and
walnuts. Bake in a preheated oven at about 350° F. for approx. 30
minutes until golden brown.
lb. yellow sweet potatoes
Water to cover
1 t. salt
2½ T. butter, melted
1/4 c. light brown sugar
