Fried Green Tomatoes
| Sprinkle tomato
slices with salt and pepper on both sides. Combine flour, baking powder,
baking soda and remaining 1/2 tsp. salt, in a bowl. Place one half of the
mixture on a piece of waxed paper. Dip both sides of the tomatoes into 1/2
of the flour mixture. Stir beer and lemon juice into remaining flour
mixture. Mixture will foam. Sir until the consistency of pancake batter.
Heat oil in a large skillet over medium heat until hot. Dip
tomatoes into batter and fry, half at a time, in hot oil until golden,
about 2 or 3 minutes on each side. Drain on paper towels. Keep warm in a
preheated oven of 200° while you fry the remaining tomatoes. Serve
immediately. Makes 16 to 20 slices.

tomatoes, sliced thinly
1/4 tsp. freshly ground pepper
1 tsp. salt
1 cup all-purpose flour
1½ tsp. baking powder
1/2 tsp. baking soda
1/2 cup beer
1/4 cup lemon juice
