Italian Green Beans with Water
| Wash and
cut the beans diagonally into bit-size pieces. Fry the bacon in a wok or
heavy skillet until crisp. Remove and drain on paper towels. Add the
beans and garlic to the hot bacon fat and stir-fry for 1 minute. Cover
with lid and fry for another minute until beans are bright and green and
slightly golden around edges, Add the sliced water chestnuts and
stir-fry approx. 1 minute until their edges are also golden brown.
Sprinkle with salt and pepper, and check for seasoning. Serve at once,
garnishing top with crumbled bacon.
lb. fresh Italian or regular green beans
4 slices bacon
1 clove garlic, crushed or sliced thin
2 c. water chestnuts, drained and sliced
1/2 t. salt
dash freshly ground pepper
