| Peel the
tomatoes and cut in half horizontally. put flour in a shallow bowl and
roll each tomato half in the flour. Dip in the butter and sprinkle top
with brown sugar, tarragon, salt, and pepper. Place in a baking dish and
broil approx. 5 minutes until golden brown.

1/3 c. flour
4 T. melted butter
3 T. light brown sugar
2 t. chopped fresh tarragon
1 t. salt
freshly ground pepper
