Italian Green Beans with Water Chestnuts

  Wash and cut the beans diagonally into bit-size pieces. Fry the bacon in a wok or heavy skillet until crisp. Remove and drain on paper towels. Add the beans and garlic to the hot bacon fat and stir-fry for 1 minute. Cover with lid and fry for another minute until beans are bright and green and slightly golden around edges, Add the sliced water chestnuts and stir-fry approx. 1 minute until their edges are also golden brown. Sprinkle with salt and pepper, and check for seasoning. Serve at once, garnishing top with crumbled bacon.

Serves 4

1 lb. fresh Italian or regular green beans
4 slices bacon
1 clove garlic, crushed or sliced thin
2 c. water chestnuts, drained and sliced
1/2 t. salt
dash freshly ground pepper
